Question: Do they go back to the round original shape after being used on a rectangular container?

Answer: I haven't had them all that long, but I I have replaced the plastic wrap covers to these, so far - I LOVE THEM! They do go back to shape, I've used them repeatedly for about 1 month, so far they are perfect! Go back to shape after, stretch to odd size shapes also, good to get away from plastic!

Question: What size pan is the biggest the lid would cover?

Answer: The largest cover easily fits our 8" stew pan. It might fit a larger pan if stretched, but whether it holds would depend on the pan's edge contours.
